I really like smoked brisket
with fries and curry ketchup capnmitch: except for the tenderloin of course… flash fry that… and smoking would make them tougher but it breaks down all the connective tissue really well, so as long as you cut against the grain, and smoked a fattier area, yeah that would work me: LOL! capnmitch: never involve a chef in this kind of conversation if you don’t want answers
